Lemon Chia Seed Protein Balls
Ok, friends, I am ready. Ready for sunshine. New growth. Birds chirping. Windows open. Warmth. I am ready for the spring and summer seasons and ALL that comes with it. Including new recipes. I am here for fresh, light flavors that taste like a spring day. So whether your actual weather is cooperating or not, you can at the very least, have a taste of sunshine. Enter lemon chia seed protein balls.
I am typically a huge chocolate and nut butter fan (you can check out my recipe for easy chocolate protein balls here)… But I fell in love with the lemon flavor of these vegan iced lemon protein bars, and wanted a quick grab and go bite sized lemon treat to have on hand for snacks. I love that protein balls are quick, easy, and freezable. If you’re new here, hi, I’m Jody and I love recipes that I can double and freeze. They are my jam. These lemon chia seed protein balls are chocked full of lemony flavor with a hint of coconut. They are vegan and gluten, dairy, and soy free if you follow the recipe exactly. This recipe is 30 Days to Healthy Living approved, and a really easy snack full of healthy, whole ingredients.

The prep:
First, grab a mixing bowl. Second, add vegan vanilla protein powder, gluten free oats, chia seeds, and stevia. Next, zest 2 lemons. Then, add zest and juice from both lemons. Lastly, add unsweetened coconut milk and vanilla. Mix thoroughly. After, form into balls.
For the purpose of blog worthy, Instagram-able pictures, I took the time to neatly roll these into balls. But most days I have no time for insta worthy prep! Time saving hack: scoop up mixture into your cookie scoop, then press firmly onto the side of the bowl to pack in, and scoop directly into your container. This cuts prep time in half. Store in air tight containers in the refrigerator. May freeze.

A quick note on ingredients:
Not all ingredients are equal. If you are following specific nutritional guidelines, you will want to pay attention to labels. Hidden fillers and artificial ingredients can be found in many foods. To avoid added sugar, make sure to grab unsweetened coconut milk. Also note that this recipe calls for the type of coconut milk you find in the refrigerated section, not the kind in a can. If you are gluten free, make sure to grab oats labeled gluten free. Lastly, when choosing a protein powder, I look for low glycemic index, vegan, and no artificial additives. I swear by this protein. Should you use another protein, you may have to tweak the amounts to get your desired consistency. You can always sub unsweetened almond milk for coconut and poppy seeds for chia seeds.

Lemon Chia Seed Protein Balls
Ingredients
- 3/4 Cup Gluten Free Oats
- 2 TBS Chia Seeds
- 5 Scoops Vanilla Vegan Protein Powder
- 1/2 TBS Stevia
- 2 Zested Medium Lemons
- 2 Lemons Juiced
- 1/2 Cup +2 TBS Unsweetened Coconut Milk In the refrigetator section (not canned).
- 1 tsp Vanilla
Instructions
- First, grab a mixing bowl.
- Add vegan vanilla protein powder, gluten free oats, chia seeds, and stevia.
- Zest 2 lemons. Next, add zest and juice from both lemons. Add unsweetened coconut milk and vanilla.
- Mix thoroughly.
- Scoop or roll in balls
- Store in an air tight contianer.
- Refrigerate. May freeze
